Ingredients:
1 cup butter
3/4 cup light brown sugar — packed
2 1/2 cups flour
1/4 teaspoon salt
1 teaspoon lemon rind — grated
1 tablespoon lemon juice
2 egg whites
2 cups filberts — finely chopped
Directions:
Cream butter and sugar until light. Mix together flour and salt. Add to butter mixture with lemon rind and juice and mix well. Chill several hours, then divide in 6 portions. Shape each portion in a rool 16″ long and 1/2″ in diameter. Cut in 2″ pieces. Dip in egg white, then roll in nuts. Put on greased cookie sheets. Pull ends toward center to form crescents. Bake in preheated 400F. oven about 10 minutes. Cool on racks. Makes 4 dozen.
