Scalloped Potatoes & Ham

Ingredients:
1/2 cup margarine
1/2 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
3 cups milk
3 cups cooked ham — cubed
1 large green pepper — chopped
1 large onion — chopped (1 c.)
1/2 cup shredded Cheddar cheese
5 cups pared, sliced potatoes — 2 pounds

Directions:

Melt margarine in large saucepan over low heat. Blend in flour, salt and pepper. Remove from heat. Add milk. Cook until thick. Fold in ham, green pepper, onion and cheese. Pour over potatoes in 13×9″ pan. Cover with foil. Bake at 350 F. for 30 minutes. Uncover and bake for one hour more until brown and bubbly. Let stand for 10 minutes before serving.

NOTE: Good, but too salty. 1/2 quantity plenty for two meals.
