Brazil Nut Snowballs

Preparation Time: 1:00 – Makes 9 dozen

Ingredients:

3/4 cup butter
1/2 cup granulated sugar
1 egg
2 tsp vanilla
2 cups flour — sifted
1/2 tsp salt
2 cups brazil nuts-finely ground
1 cup confectioner’s sugar

Directions:

Start heating oven to 350F. In large bowl with electric mixer at medium speed, beat butter with granulated sugar until creamy. Beat in egg and vanilla, then continue beating until mixture is fluffy. Sift together flour and salt. Add to butter mixture with Brazil nuts; beat in thoroughly. Shape into 2/3-inch balls. Place on ungreased cookie sheets. Bake 20 minutes; they’ll still be almost white. Cool balls slightly on cookie sheets; roll in sifted confectioners’ sugar.
