Crab Cakes

Recipe By: Old Bay Seasoning
Preparation Time: 1:00 – Number of Servings: 6

Ingredients:

1 pound crab meat
1 egg — slightly beaten
1 tablespoon mayonnaise
1 tablespoon Worcestershire sauce
1 tablespoon parsley
1 tablespoon baking powder
1 teaspoon Old Bay Seasoning
1 cup bread crumbs
1 stick butter

Directions:

(I usually use back-fin or jumb-lump crab since the others have too much shell.)

Remove any pieces of shell from crab and place in bowl. In small bowl, beat egg slightly. Add mayonnaise, Worcestershire, parsley, baking power and Old Bay to egg and mix thoroughly. Pour mixture into crab and mix gently. Form crab cakes and coat with bread crumbs. Put crab cakes in refrigerator for an hour to set. Fry in butter until golden brown.


Serve with cole slaw, french fries, cocktail sauce and a wedge of lemon.
