French Fried Shrimp

Ingredients:
2 pounds Unpeeled medium-size shrimp
1 cup All-purpose flour
1 1/2 teaspoons Baking powder
1/2 teaspoon Salt
2/3 cup Water
2 tablespoons Lemon juice
1 tablespoon Vegetable oil
1 Egg — beaten
Vegetable oil for frying
Seafood Cocktail Sauce

Directions:

Peel and devein shrimp. Combine flour, baking powder, and salt in a medium bowl; make a well in center. Combine water, lemon juice, 1 tablespoon oil, and egg; add to dry ingredients, and stir until batter is smooth. Dip shrimp in batter, and fry in hot oil (375 degrees) until browned. Serve with Seafood Cocktail Sauce. Yield: 4 to 6 servings.
