Recipe from Mildred Taylor. Appeared in newspaper as Bess Truman’s recipe.
Ingredients:
1 egg
3/4 cup granulated sugar
3 tablespoons flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1/2 cup apples — chopped
1/2 cup English walnuts — chopped
Directions:
Beat egg and add sugar gradually until thick. Add flour, baking powder and salt. Stir in vanilla, apples and walnuts. Pour into buttered pie plate. Bake at 350 for 20-25 minutes. Serve with whipped cream. (Note: puffs up a lot when baking, then falls, that’s OK.)
