Ambrosia

Recipe By: “Mammy” Spitler – Preparation Time: 2 hours – Number of Servings: 12

Ingredients:

2 dozen very large oranges
2 cans pineapple slices in juice
2 cups shredded coconut meat

Directions:

Scoop out orange sections. (Canned mandarin oranges may be used, but not as good as fresh.) Drain pineapple slices, reserving liquid. Cut into pieces about the same size as orange sections, and add to oranges. Add coconut and some of the pineapple juice (depending on how much juice there is in the bowl from the oranges–about equal amounts of both).

Notes: When I was a girl, Mammy, who lived with the family next door, would give a bowl of this wonderful stuff to our family to have for Christmas breakfast.
