Orange Nut Bread

Recipe By: Doubleday Cook Book 1985

Ingredients:

2 3/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter — softened
1 cup honey — strained
1 egg — lightly beaten
1 1/2 teaspoons grated orange rind — finely grated
3/4 cup orange juice
3/4 cup pecans, walnuts or blanched almonds — coarsely chopped

Directions:

Preheat oven to 325F. Sift flour with baking powder, soda, and salt and set aside. blend butter with honey until creamy, add egg and orange rind and mix well. Add sifter ingredients alternately with orange juice, beginning and ending with the sifted. Fold in nuts. Spoon into a greased 9x5x3″ loaf pan and bake 1-1 1/4 hours until loaf pulls slightly from sides of pan and is springy to the touch. Let cool upright in pan 10 minutes, then turn out and cool on a wire rack.
